Corona Chicken

This quick and fiery little number is ideal for those days when you're hungry and need your food now! It's furiously delicious in it's simplicity.

For a year like 2020, simplicity and quality is what we all crave. Simple lives, quality time. Food has the ability to bring us together in a way which very few other things can. Therefore I dedicate this recipe to my friends who have had a hard year and need a fiery boost.

I must confess, I have never had the urge to drink Corona - that famous Mexican beer which has now found itself to be a namesake of something rather less drinkable this year. Having now completed this recipe. I have still not drunk Corona! The remaining half of the bottle I used to cook stands proudly in the bottle as I enjoy the dish with a delicious glass (soon to be two) of a great South African Chenin Blanc. So to all you beer lovers, I apologise.

The recipe is very simple indeed.

Ingredients

2 skinless chicken breasts

2 small hot red chilies

Chunky croutons

2 cloves crushed garlic

Olive oil

180ml Corona Extra

1 tbsp feta

1 lime

2 tbsp chopped parsley

Salt & pepper

Method

When you get home, pour yourself a large glass of something delicious.

Put the oven on to a high heat (200°C) and get cracking with the rest.

Tear whatever bread you have at home into fairly large chunks and place on a baking tray. Sprinkle with a little olive oil and toss them about until coated. Place in the oven for 5-8 minutes.

You can now turn your attention to the chicken. Slice the breasts into as thin and wide pieces as you can. Sprinkle with salt and pepper.

Chop the two chilies and crush the garlic.

In a wide pan, heat a generous glug (1tbsp) of olive oil and gently fry the chicken for 2 minutes on each side on a moderate heat.

Remove the croutons from the oven and turn the oven off.

When the chicken is cooked on both sides - with a little colour - remove it from the pan and place on your serving dish and keep warm in the oven.

In the same pan, sauté the garlic for a minute and then add the beer. Reduce this by half.

Now add the fiery chilies and half of the chopped parley to the sauce and if you're like me, a little butter at the end to liven up the sauce.

The dish is practically ready to assemble and hopefully I didn't need to remind you to take several sips of your drink in between. So pour your second glass and set the table.

To finish, remove the chicken from the oven and pour the sauce over it. Squeeze the lime juice over it and crumble with feta. Top with the croutons and sprinkle with the remaining parsley.

If indeed it's been one of those days (or indeed that year!), you're at liberty to top the dish with a few tears and tuck in!
